Mediterranean Quinoa Salad

Easy to do healthy quinoa salad with Mediterranean flavours. Loaded with protein. Can be served as a great side dish too.

Ingredients • 1 cup uncooked quinoa • 2 cups water • 1/4 cup yellow onion, diced • 1/2 - 3/4 lemon, squeezed • 1/4 cup pitted black olives, sliced • 2 tbsp balsamic vinegarette • 2 cups cucumber, peeled and diced • 1 cup red, yellow and green bell peppers, quartered • 1/3 cup crumbled feta • salt and fresh pepper, to taste Place 1 cup of quinoa and 2 cups of water in a saucepan and bring to a boil. Reduce to simmer, cook until water absorbed, approx. 10 mins. Fluff the quinoa gently with a fork to separate the grains and set aside in a large mixing bowl to cool. Combine the onion, olives, cucumber, bell peppers to the cooled quinoa. Squeeze 1/2 lemon over it. Drizzle balsamic vinegarette, then add feta, salt and pepper to taste and toss well.
